Italian Cuisine

Most people think Italian food consists mainly of pizza, chicken parmesan or spagetti and meatballs. This couldn't be farther from the truth. Italian cuisine is some of the finest and most delicious in the world. When travelers to this beautiful country describe their visit they will most likely talk about the food first.

Cuisine in Italy is extremely diverse and each region of the country boasts its own fine ingredients. Northern Italy has some of richest and most abundant food sources and many of the most well-known Italian foods come from this area. Parmigiano Reggiano, the salty, hard white cheese is crafted in the Emilia Region of Italy. The sweet and rich pesto which has become a staple in many homes can be found at its best in Liguria. The food found in Southern Italy is just as delicious and unique as the cuisine found in the north. Southern Italian cuisine relies heavily on the use of olive oil as its main fat, unlike Northern Italian dishes which use butter. Pizza can be found in Southern Italy but it is unlike the pizza served in America. Pizza Siciliana is a delicious authentic Italian pizza with traditional buffalo milk mozzarella, basil, garlic, anchovies and olives.

Southern Italians enjoy many pasta dishes including the lovely Pasta Puttanesca with its capers, anchovies and garlic based red sauce. Seafood also abounds in this area and Southern Italian are no strangers to many seafood dishes.
